Ingredient - Preparation Method
2 cups dried Navy pea beans 8 cups water 1 large rib celery -- diced 1 clove garlic -- finely diced 3/4 lb smoked ham hocks 1 large onion -- chopped 2 med potatoes -- boiled, mashed to taste salt and pepper
Combine beans and water and bring to boil for 5 minutes, uncovered. Remove from heat and let stand, covered, for 1 hour. Add next 5 ingredients and return to a boil. Reduce heat and simmer, covered, for 2 hours, or until beans are tender. Remove ham hock, cut off meat and chop. Return to soup. Bring soup to serving tempurature and add seasonings. Variations: Add one or more of the following: 1 med carrot, chopped, 1/2 green pepper, chopped, 1/2 c. tomato puree.
