Rhubarb Pie

4 cups rhubarb -- chopped
2   eggs -- beaten
1 dash salt
2 teaspoons flour
1 cup sugar


Prepare favorite pie crust or purchase a 2-crust pastry. Line pie plate with one pastry. Peel rhubarb and chop into 1/2 inch pieces. Put into pie crust. Mix eggs, flour, dash of salt and 1 cup sugar together and stir until well blended. Pour over rhubarb. Add top crust and flute edges. Cut slits in top curst for steam to escape. Sprinkle with a little sugar. Bake at 425 degrees for 10 minutes. Reduce heat and bake 30 minutes longer. Tip: Put foil over fluted edge of piecrust to prevent burning.
