Ingredient - Preparation Method

2/3 cup salad oil
1 cup sugar
2   eggs
1 1/2 cups flour
1/2 tsp. soda
1 tsp. cinnamon
1 tsp. nutmeg
1/4 tsp. salt
1   carrot -- grated
3/4 cup raisins -- boiled


Cream oil and sugar; add eggs. Mix well. Stir dry ingredients into creamed mixture and mix. Add carrots. Boil raisins; add raisins and 1 or 2 tablespoons liquid to mixture. Mix thoroughly. Pour into greased loaf pan. Makes 1 large or 2 small loaves. Bake at 350 for 45 minutes.
